Primarily made from New Zealand-grown olives, with artisanal Australian extra virgin olive oil blended in to maintain supply through leaner local harvests (the ratio varies season to season). Like all genuine EVOO, it must meet a free fatty acid threshold below 0.8% to carry the “extra virgin” grade, with a lower FFA generally meaning fresher oil and more preserved antioxidants.
