Ingredients

• 3 tbsp Global Village Organic EVOO
• 1 tbsp fresh lemon juice
• 1 tsp Dijon mustard
• ½ tsp runny honey
• 1 small clove garlic, finely grated
• Flaky sea salt and freshly cracked black pepper

Combine all ingredients in a small jar with a tight-fitting lid. Seal and shake vigorously until the dressing emulsifies into a smooth, glossy consistency. Taste and adjust — a little more lemon if you want it brighter, a touch more honey to soften.

Dress your salad just before serving and toss well so every leaf is lightly coated. This dressing works beautifully over bitter greens, roasted vegetables, warm grain salads, or simply a ripe avocado.
